The first true distillation of alcohol probably occurred in China during the 12th century with either the Jin or Southern Song dynasties.

The first whiskey made in America was a corn based liquor made by an Englishman named George Thorpe in 1640. America’s whiskey industry took off in the late 1700s. This still would be at home in George Washington’s distillery or the mountains of Tennessee in the early 1900s.

Grain and water are first mixed with yeast and allowed to ferment, producing a slurry called mash.  The mash is strained and the alcohol in this liquid is extracted through a process of called reflux, where controlled heat boils off compounds with lower boiling points. The vapors are cooled and precipitate ethanol, which boils at about 173°F. 

Above the fire box, sits the round- bottomed pot, where the wash is heated. Above the pot is the swan neck there the vapors rise. The next component is the Lynn arm that connects to swan to the worm. This is a coiled copper radiator in a water bath which cools the vapor and precipitates distillate in the form of alcohol. At the bottom is a small spigot where the alcohol is decanted to a container.
